Anyone who knows me knows I love potatoes; I can eat them almost every way you can imagine! One of my favorite ways to cook them, however, is by seasoning and roasting them. In this week’s blog post, I wanted to share one of my favorite recipes right now; roasted potato and veggie scramble. It’s fast, easy and healthy; what a winner!
-3 golden potatoes
-Any kind of veggies you prefer (I buy a frozen bag of mixed veggies from Sprouts)
1). Rinse and clean the potatoes
2). Cut the potatoes into chunks (I like my chunks a little bigger)
3). Soak the potato chunks in room temperature water for 15-20 minutes (This helps them absorb the seasoning better)
4). Spray a baking sheet with Pam, and spread the potato chunks evenly
4). Season with any seasonings you like (My personal favorite is garlic salt)
5). Cook in the oven for 1 hour at 350 degrees (or until golden brown)
6). Cook your veggies, mix together, and enjoy!
