I think we can all agree, fueling our bodies with the right food is so important. However, the task of cooking and meal prepping can be so daunting, especially for a beginner! Before I learned some simple, basic recipies, I had no idea where to start. In this week’s blog post, I wanted to share 3 of my favorite simple, go-to healthy recipies.
1). Rice and Veggie Bowl
This is a perfect option for when you need a quick dinner, with almost no prep time. I just use brown rice (I get the quinoa blend from Sprouts) and a bag of frozen “California Blend” veggies.
2). Protein Scramble
For this recipe, all you need is black beans, a bag of frozen corn, tomatoes, and cheese. Heat up your black beans and corn, sprinkle a little cheese on top, and throw on some cut up tomatoes.
3). Tuna Salad & Tortilla Chips
You can buy pre-made tuna salad, but I really love making my own. I get canned tuna from Sprouts (usually Skip Jack), parsley, tomatoes, mayonaise, and cheese. Mis it all together, throw some yellow corn tortilla chips on the side, and you’re good to go!
