Raise your hand if you could use some simple meals to make during the week that are both healthy and delicious. Well, I’ve got your back in this week’s blog! I wanted to take some of the overwhelm out of your food prep, and give you some options to help you get through the week!
1). Scrambled Egg Toast
This is one of my favorite breakfasts to make! I make a piece of multigrain toast (for me it’s gluten free), top it with a scrambled egg, add some cheese and ketchup (or any toppings you prefer) and you’re good to go!
2). Homemade Salad
Ya’ll this one is a life-saver during the week! If you chop up your veggies over the weekend, you can just throw your lettuce or greens of choice, veggies, and some kind of protein (ham/tuna/etc) in a container the night before. Easy, and full of nutritious foods!
3). Whole Wheat Pasta w/ Sauce & Veggies
Talk about a hearty, comfort-food! Boil your whole wheat pasta for about 10 minutes, top it with your favorite sauce, and add in a side of veggies.
4). Fruit Salad
This is a great snack option, and so easy to throw together! You can buy your fruit re-cut, and throw it all together in a container.
